Zucchini Hummus makes a fantastic alternative to chickpea hummus.
- 2 medium zucchini, peeled and chopped
- 1⁄2 c. tahini
- 1⁄3 c. fresh lemon juice
- 1⁄3 c. olive oil
- 3 garlic cloves
- 1 1⁄2 tsp. cumin
- Kosher salt and black pepper to taste
Combine all ingredients in a food processor until smooth.
