Coconut Bowl

Lovely to look at and fun to eat, this coconut bowl is packed with flavor and nutrition. 

Serves 1

  • 1 young Thai coconut
  • 1⁄2 c. vanilla Greek yogurt
  • 1⁄2 c. diced mangos, raspberries,blackberries, and blueberries
  • 1⁄2 tsp. coconut flakes

Crack open coconut. Drain water (save for drinking). Add yogurt into coconut, lay- er with fresh fruit, and top with coconut flakes. Best served chilled.

Turkey Sliders

These Turkey Sliders are easy and perfect for parties, game days, or any other gatherings!

Serves 4

  • 20 oz. dark ground turkey or white for leaner taste
  • 1 tbsp. Dijon mustard
  • 3 tbsp. Worcestershire sauce
  • 1⁄2 c. breadcrumbs
  • 1⁄2 tsp. salt
  • 2 c. diced caramelized onions, divided
  • 6 mini brioche buns
  • 1 avocado, chopped
  • 4 medium tomatoes
  • sliced 6 oz. soft goat cheese
  • 1⁄3 c. chives, diced

In a medium bowl, using your hands, combine turkey, Dijon, Worcestershire, bread crumbs, salt, and 1 c. diced caramelized onions. Form mixture into 3″–4″ patties and place on a baking sheet. Refrigerate covered 1–2 hours. On a medium-high grill or skil- let, coated with nonstick cooking spray, cook each burger for 2–3 minutes on each side. Meanwhile, toast buns to your liking. Assemble burger with avocado, a slice of tomato, a tbsp. of onions, a dollop of goat cheese, and a sprinkle of chives. Serve immediately.

Coconut Creamed Spinach

Try this rich and satisfying dairy-free creamed spinach for a healthy alternative!

Serves 2

  • 1 tbsp. extra-virgin olive oil 1 garlic clove, finely minced
  • 1⁄2 shallot, finely minced
  • 5 oz. baby spinach leaves
  • 4 tbsp. light coconut milk
  • 1⁄2 tsp. mild curry powder
  • Salt to taste
  • Freshly cracked black pepper

Directions:

Heat olive oil over medium in large sauté pan. Add garlic and shallot. Cook until fra- grant, about 1 minute. Add spinach and stir around until it begins to wilt. Add coconut milk, curry powder, salt, and pepper. Stir until combined, about 1 minute.
